Ladies and Gentlemen, I present you with the World’s Best Grilled Pork Chop!
Okay, okay…these might not be the world’s best pork chops but they are awfully dang great. Here is a link to what I think are the best smoked pork chops I have ever made.
These thick chops were grilled with indirect medium heat for about 30 minutes on my Weber Jumbo Joe. I was trying out some coconut charcoal on this cook and can absolutely say that I am not a fan of the stuff.
I am sure there are many redeeming properties about coconut charcoal. The stuff burns too different from Kingsford for me to really get comfortable with it. Considering that this stuff isn’t cheap I don’t think I will be buying anymore just for experimentation sake.
They key to these awesome grilled pork chops is the brine. These thick cut chops were brined for six hours with the following:
- 1 quart water
- 1/3 cup salt
- 1/3 cup molasses
- 1/3 cup honey
After bring the chops were rinsed, patted dry and seasoned with black pepper. The chops were grilled for 20 minutes with indirect medium heat and were looking pretty nice.
The chops got basted with some Jim Beam barbecue sauce and were allowed to cook for another another 10 minutes until an internal temperature of 150F was reached.
I picked this sauce as it has a molasses component with a nice vinegar twang. This is not a sweet sauce. It’s a bit like what you would get if you mixed A1 Steak Sauce with some Sweet Baby Rays.
These were the juiciest chops I have ever grilled. These chops were completely delicious and I was a bit sad that I only grilled two of them. I’ll know better next time.
